Apple Blackberry Crumble

Ingredients

For the fruit layer

  • 2 peeled and diced granny smith apples
  • 2 cups fresh or frozen blackberries
  • 4 tbsp coconut sugar
  • 1 tsp ground cinnamon 
  • 1 tbsp lemon juice
  • 2 tbsp water

For the topping

  • 1 & 1/3 cup instant oats
  • 1 tsp ground cinnamon
  • 3 tbsp maple syrup
  • 3 tbsp coconut sugar

Instructions

  1. Place all the ingredients for the fruit mixture in a saucepan and cook on high heat until it comes to a boil, then continue to cook on medium-high heat for an additional 10 minutes.
  2. Pour the fruit mixture into a 9x9in baking dish and set aside. 
  3. Preheat oven to 355 degrees F.
  4. Place the oats and ground cinnamon in a mixing bowl and heat the maple syrup and coconut sugar for the topping in a saucepan over high heat until the sugar is melted, stirring frequently. Pour the mixture into the bowl with the oats and mix until well combined. 
  5. Spread the topping onto the fruit layer in the baking dish.
  6. Place in the oven and bake for 10-20 minutes or until topping is golden brown.
