Baby kale salad with apples, nuts, and feta

Ingredients

  • 1 large bunch kale leaves
  • 4 oz feta cheese
  • 1/2 cup nuts (sliced walnuts or others)
  • 2 red apples – diced, sprinkled with lemon juice
  • 3 tbsp olive oil
  • 1-2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Tear kale into very small pieces off of stems.
  2. Massage kale gently with some olive oil on hands to soften it; add all ingredients to the bowl.
  3. Add the dressing and let sit for 10 minutes before serving.
