Bean Salad

Ingredients

Salad

  • 8 oz canned green beans
  • 15 oz canned kidney beans (rinsed and drained)
  • 15 oz canned black beans (rinsed and drained)
  • 3/4 cup celery, finely diced
  • 1/3 cup white onion, finely diced 
  • 2 tbsp minced Italian parsley (optional)

Dressing

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar 
  • 2 tbsp sugar 
  • 1 tsp minced garlic 
  • Salt and black pepper to taste

Instructions

  1. Combine dressing ingredients in a jar or container with a tight fitting lid. Cover and shake for 30 seconds. Add salt and pepper to taste.
  2. Drain canned green beans. 
  3. In a large bowl, combine green beans, kidney beans, black beans, celery, and onion.
  4. Add dressing and toss to combine. 
  5. If desired, sprinkle parsley over mixture and toss again.
  6. Enjoy immediately or refrigerate in an airtight container.
