Black Bean Brownies

Ingredients

  • 1/2 cup chocolate chips, semi-sweet
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup canola oil
  • 1/2 cup maple or cane syrup
  • 1/8 tsp salt, kosher
  • 1/2 cup quick oats
  • 3 tbsp cocoa powder, unsweetened
  • 1 1/2 cup black beans, canned, drained and rinsed

Instructions

  1. Gather ingredients and equipment.
  2. Preheat oven to 350 degrees.
  3. In a single serving size blender, blend oats into a fine powder. Move the ground oats to a medium size bowl.
  4. In the same blender, combine all other ingredients. Blend until smooth and add to the bowl.
  5. Mix well and transfer to a greased mini muffin pan (fill cups to just below the top) or 9x9in baking dish.
  6. Bake for 8-12 minutes until done and a test with a toothpick comes out clean. If using a 9x9in pan, it may need baked 15 minutes.
