Black Bean Burgers with Cheese

Ingredients

  • 1 (15 oz) can low-sodium black beans, drained and rinsed
  • 1/2 red bell pepper, small dice
  • 1/2 onion, small dice
  • 1/2 cup cheddar cheese, shredded
  • 1 clove garlic, minced (or 1/2 tsp garlic powder)
  • 1 tbsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • Black pepper, to taste
  • 1/8 tsp cayenne pepper (or any spice pepper you like)
  • 1 egg
  • 3/4 cup whole wheat breadcrumbs or almond flour
  • Cooking spray, as needed
  • 2 tomatoes, sliced
  • 2 cups greens (romaine, spinach, arugula) 
  • 6 whole wheat hamburger buns or sandwich thins

Instructions

  1. Preheat oven to 375 degrees.
  2. Mash beans in a large bowl with a fork or potato masher.
  3. Mix in red pepper, onion, cheese, garlic, seasonings, egg, and breadcrumbs/flour. Mix well.
  4. Form into 6 patties.
  5. Line baking sheet with foil and spray lightly with cooking spray and place patties on baking sheet.
  6. Cook in oven until burgers firm up and reach internal temp of 165 degrees, about 12 minutes.
  7. Serve on toasted buns with lettuce, tomato, and any other condiments you like.
