Citrus Roasted Beet Salad

Ingredients

  • 3 medium to large beets peeled and trimmed
  • 1 orange with zest
  • 1 lime with zest
  • 2 tbsp olive oil salt to taste
  • 1/2 cup chives minced - optional

Instructions

  1. Wrap beets in aluminum foil and roast at 400 degrees for 60 min.
  2. Once cooled, the skins will easily peel off.
  3. Cut beet in thin slices.
  4. Add lime or lemon zest and juice from entire orange. 
  5. Add olive oil and toss to combine. Add salt to taste and toss to combine.
  6. Optional - Add chives just before serving.
