Corn Pudding

Ingredients

  • 15.25 oz sweet yellow corn, drained
  • 8.5 oz corn muffin mix
  • 16 oz fat free greek yogurt
  • 1/4 cup melted butter
  • 1/2 cup egg whites

Instructions

  1. Preheat oven to 350 F.
  2. Spray 9 x 13 inch baking dish with cooking spray.
  3. In a large bowl, combine all ingredients and mix (should have fluffy consistency).
  4. Pour mixture into baking dish and bake 55-60 minutes (edges should be golden).
  5. Let cool a few minutes before cutting.
