Cranberry Citrus Bread Pudding Muffins

Ingredients

  • 6 slices of whole wheat bread (can be lightly stale)
  • 1 medium banana, chopped
  • 1 medium apple, peeled and chopped
  • 1 & 1/2 cups raw, fresh cranberries, chopped (can mix with 1 tbsp stevia to help with bitterness)
  • 1/2 cup walnuts, chopped
  • 1/4 tsp salt
  • 1 tbsp orange zest
  • 3 large eggs
  • 1/2 cup unsweetened almond milk (or regular milk)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp stevia

Instructions

  1. Gather ingredients. Preheat oven to 350 degrees.
  2. Combine dry ingredients in a large bowl: bread, banana, apple, cranberries (with stevia), walnuts, salt, and orange zest.
  3. In a separate bowl, combine wet ingredients: eggs, milk, cinnamon, vanilla extract, and stevia. Stir to mix.
  4. Pour wet mixture into the dry mixture, mix well.
  5. Spoon mixture into muffin tins. Place into oven uncovered and cook for approximately 20min or until bread starts to brown.
