Cranberry Walnut Chickpea Salad

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 green onion
  • 1 stalk celery
  • 2 tbsp walnuts, chopped
  • 2 tbsp dried cranberries
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard (optional)
  • 1/8 tsp salt
  • Pinch of pepper

Instructions

  1. Mash chickpeas with a fork
  2. Add chickpeas to a bowl with celery, green onions, dried cranberries, walnuts.
  3. Add mayonnaise and Dijon mustard, along with salt and pepper to taste.
  4. Serve on whole grain crackers or slices of raw pepper.
