Curried Chicken Salad

Ingredients

  • 1 14 oz can chicken breast
  • 1/4 cup diced onion
  • 1 celery stalk, diced
  • 1 avocado
  • 1/8 cup mayonnaise
  • 1 tsp dijon mustard
  • 1 and 1/2 tbsp curry powder
  • 1/ tsp granulated garlic (or garlic powder)
  • Salt and pepper to taste

Instructions

  1. Place can of chicken and onion in a bowl.
  2. Mash ripe avocado and add the mayo, mustard, and spices.
  3. Add to the chicken and onion mixture, mix together.
  4. Can eat with sliced cucumber, place on whole wheat bread, or serve on a bed of lettuce/greens for a salad.
