Egg and Sausage Breakfast Muffins

Ingredients

  • 12 eggs
  • 1 cup milk
  • 1 cup cheddar cheese, shredded
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 pound breakfast meat: turkey sausage, pork sausage, bacon, or ham
  • 1 cup veggies of choice: fresh spinach, broccoli, and tomatoes or peppers and onion

Instructions

  1. Warm frying pan over medium-high heat. Add 2 tsp olive oil. Add breakfast meat and cook until fully cooked.
  2. In a medium bowl beat the eggs and milk. Stir in the cooked meat, shredded cheese, and veggies.
  3. Spoon the egg/meat/veggie mixture into 12 greased or paper-lined muffin tins.
  4. Bake at 350 for 30-40 degrees until set. Check often after 30 minutes.
