Low-Carb Pumpkin Pie Parfaits

Ingredients

  • 1/3 cup canned pumpkin puree
  • 1/3 cup whole milk Greek yogurt
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1 tsp pumpkin pie spice
  • Stevia to taste 

Instructions

  1. Mix pumpkin puree with 1/2 tsp pumpkin spice and stevia to taste (can add more pumpkin spice to taste as well).
  2. Place puree in a cup and top with 1/8 cup of the chopped nuts.
  3. Mix yogurt with ½ tsp of pumpkin spice and stevia to taste for desired taste (can add more pumpkin spice to taste as well).
  4. Place yogurt mixture on top of the nuts in the cup.
  5. Top yogurt with the remaining nuts.
  6. Optional variation for those who are not eating low-carb – can add granola to the nut topping for added crunch. Can also use honey instead of stevia for those who are not eating low-carb.
