Ingredients

Bites:

  • 1/2 cup peanut butter
  • 1 tsp ground cinnamon
  • 3 tbsp coconut flour
  • 3 tbsp coconut milk, canned
  • 2 tbsp stevia or stevia/erythritol
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Topping:

  • 1 & 1/2 tsp ground cinnamon
  • 1 & 1/2 tbsp stevia or stevia/erythritol

Instructions

  1. Gather ingredients.
  2. Combine peanut butter, 1 tsp cinnamon, coconut flour, coconut milk, 2 tbsp stevia/erythritol, vanilla extract, and salt in a bowl. Stir to mix until you have a smooth, doughy mixture.
  3. Shape into 12 balls.
  4. In a separate, small bowl, combine the topping ingredients: 1 and 1/2 tsp cinnamon with 2 tbsp stevia/erythritol. Stir to mix.
  5. Roll balls in the topping mixture in a light coat and place in a container.
  6. Can serve right away or store in the refrigerator or freezer until ready to serve.
