Microwave Brownie

Ingredients

  • 2 tbsp coconut oil
  • 2 tbsp unsweetened coconut milk or low-fat milk
  • 1/4 tsp vanilla extract
  • 1 1/2 tbsp almond flour
  • 1 tbsp sugar equivalent (Stevia)
  • 1 tbsp unsweetened cocoa powder
  • 1/8 tsp salt
  • 2 tsp mini chocolate chips (optional)

Instructions

  1. Place coconut oil in a small microwave-safe coffee mug and microwave on high until melted (15-20 seconds).
  2. Allow oil to cool for about 1 minute.
  3. Whisk in coconut milk (or milk) and vanilla extract.
  4. Add almond flour, sugar, cocoa, and salt; continue whisking until completely incorporated.
  5. Stir in chocolate chips, if using.
  6. Microwave on high 30-40 seconds or until it is firm to touch and no longer glossy.
  7. Let stand for 8-10 minutes.
