Oatmeal Pancakes

Ingredients

  • 2 & 1/2 cup rolled oats
  • 1 & 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1 and 1/4 cup unsweetened almond milk

Instructions

  1. Add the rolled oats to a blender and blend till they resemble a flour-like consistency.
  2. Add baking powder, salt and cinnamon to the blended oats.
  3. Add in the milk and eggs and mix till well incorporated. Set mixture aside for 5-8 minutes to thicken up.
  4. Place pan over low-medium flame and let it warm.
  5. When pancake mixture is thickened, grease pan cooking spray and ladle 1/4 cup of mix onto pan, and cook 2-3 minutes on each side until golden.
  6. Enjoy with sugar-free syrup.
