One-Pot Irish Dinner

Ingredients

  • 2 lbs ham, sliced and on-bone
  • 1 medium head cabbage, chopped
  • 3 cups ham broth or water
  • 1 tsp pepper
  • 2 cans potatoes (whole or sliced)
  • 2 cans green beans
  • 1 can carrots

Instructions

  1. In a 6–8-qt crock pot add ham on its side, chopped cabbage and broth or water and pepper. Cover and allow to cook on high for 2 hours or until cabbage is tender.
  2. Remove lid and add remaining ingredients, cover and allow to continue cooking for an additional 30-50 minutes on high heat.
  3. When ready, remove lid and separate ham from bone and discard bone.
  4. Serve up in bowls with equal portions of veggies and meat.
