Pumpkin Deviled Eggs

Ingredients

  • Dozen eggs
  • 1/3 cup canned pumpkin puree
  • 1/3 cup mayonnaise or ripe avocado
  • 1 tsp dijon mustard
  • 1/2 tsp coriander
  • Salt to taste
  • Optional topping: chopped chives

Instructions

  1. Hard-boil eggs
  2. Halve hard-boiled eggs
  3. Mash the yolks with 1/3 cup each pumpkin and mayonnaise, 1 teaspoon Dijon mustard and 1/2 teaspoon each ground coriander and salt.
  4. Spoon into the whites
  5. Optional – top with chopped chives
