Ricotta Mousse and Berries

Ingredients

  • 1 cup (8 oz) whole milk ricotta
  • 1/2 cup heavy whipping cream
  • 2 tbsp honey or 2 tsp stevia
  • 1 tsp vanilla flavoring
  • 1 1/2 cups sliced berries (strawberries or raspberries work well)
  • 1 tbsp balsamic vinegar
  • 1 tsp peppercorns

Instructions

  1. Place the ricotta, sweetener, and vanilla in a small bowl and whip until smooth. Cover and refrigerate 1 hour.
  2. Place berries in a small bowl with the balsamic vinegar and pepper and stir to combine. Cover and refrigerate.
  3. To serve, put berry mixture on top with the ricotta mousse. Makes six 1/4 cup servings.
