Roasted Pork Tenderloin

Ingredients

  • 3 lb pork tenderloin
  • 3 tbsp brown sugar (exclude if doing low-carb – can do some stevia/erythritol)
  • 4 tbsp dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1 tsp ground pepper

Instructions

  1. Preheat oven to 450 degrees
  2. Place pork tenderloin on a rack in a shallow roasting pan.
  3. Combine the sugar, mustard, paprika, salt and pepper in a small bowl until well-mixed. Spread half the mixture over the top of the pork.
  4. Place the pork in the oven and back uncovered for 15 min at 450 degrees.
  5. Spread the remaining brown sugar mixture over the pork and bake for 25-30 min longer or until the pork is done at 160 degrees on a meat thermometer.
  6. Remove from oven and let pork sit for 5 min before slicing and serving.
