Roasted Sweet Potatoes and Black Bean Tacos

Ingredients

  • 1 cup cubed sweet potatoes
  • 1 cup black beans
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chile powder
  • 2 tortillas
  • 1/2 avocado
  • 1/2 cup salsa 
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425 degrees F. Cut potatoes into cubes.
  2. Place cut-up sweet potatoes onto a baking sheet and toss in 1 tbsp of olive oil, salt, and pepper.
  3. Cook until soft inside and crispy on the outside, 30 minutes.
  4. Combine roasted sweet potatoes, beans, remaining 1 tbsp of olive, and spices in a saucepan on the stovetop. Cover and cook on medium heat until heated through, 5 minutes.
  5. Divide mixture among tortillas.
  6. Top with avocado and salad.
