Sautéed Swiss Chard and Onions

Ingredients

  • 2 tbsp olive oil
  • 1/4 large red onion, chopped
  • 2 pinches red pepper flakes (more if you want extra heat)
  • 1 large bunch of Swiss chard, stems chopped, leaves chopped in strips 1 inch wide
  • Salt

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat.
  2. Add onion and red pepper flakes. Cook until onion begins to soften and turn translucent, about 3 minutes.
  3. Add chard and cook for 5 minutes. It will greatly reduce in size.
  4. Cover and cook over medium heat for 2-3 minutes until the chard reaches desired texture.
  5. Add salt to taste. A few pinches should do.
