Sautéed Zucchini Noodles

Ingredients

  • 2 large zucchinis
  • 1 tbsp extra virgin olive oil
  • 1 tsp minced garlic
  • 1 tbsp grated parmesan cheese
  • 1 tsp minced parsley
  • Salt and pepper

Instructions

  1. Wash the zucchini and cut off the ends.
  2. Use a vegetable peeler, cheese grater, chef’s knife, or spiralizer to cut zucchini into thin 1/4 inch wide strips. 
  3. Heat 1 tbsp of olive oil in a large sauté pan or skillet over medium heat.
  4. Once the oil is hot, add one tsp garlic and sauté for 30 seconds.
  5. Add the zucchini noodles and sauté for 5 minutes, until just tender and al dente.
  6. Taste the noodles and season with salt and pepper as needed.
  7. Garnish zucchini noodles with parmesan cheese and parsley.
