Southwestern Corn Salsa

Ingredients

Salsa

  • 15 oz canned whole kernel corn
  • 1/2 cup chopped red onion
  • 1 medium red pepper, seeded and chopped
  • 1 large tomato, diced
  • 1 tsp minced garlic
  • 1/3 cup chopped cilantro

Dressing

  • 1/4 cup canola oil 
  • 1/4 cup lime juice
  • 1/4 tsp ground cumin
  • 1/8 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Combine corn, onion, pepper, tomato, garlic, and cilantro in large bowl. Mix to combine.
  2. In separate bowl, whisk together oil, lime juice, cumin, and cayenne pepper.
  3. Pour dressing over vegetable mixture. Stir to combine. 
  4. Add salt and pepper to taste.
  5. Enjoy (Best if refrigerated for at least 1 hour)
