Veggie Frittata

Ingredients

  • 2 large eggs
  • 1/3 cup of spinach
  • 1/4 cup of mushrooms, chopped
  • 1/2 Roma tomato, diced
  • 1tsp olive oil
  • Salt & pepper (as needed)
  • Garlic & onion powder (as needed)

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk together eggs, salt, pepper, garlic and onion powder.
  3. Heat olive oil in oven-proof skillet, add mushrooms and cook until tender.
  4. Add tomatoes and spinach, cook until spinach is wilted.
  5. Stir in egg mixture, cook until edges are set.
  6. Place into oven and bake until top is golden brown.
